Eggs in a ‘Hole’ Lot of Ways

You don’t need a recipe but only a pinch of creativity to come up with ‘egg-citing’ spreads for breakfast or brunch. Bobo Chang has the details.

There are no recipes really, just four easy steps:

Instructions for flower sunny-side-up and eggs in onion rings
  1. Cut bell peppers (also known as capsicums) or onions into 1/2 inch rings
  2. Place in a non-stick lightly-greased pan
  3. Season the eggs as you desire
  4. Crack an egg in the middle of each ring and cover/cook over low heat until done

  2. Hollow them out to fill the eggs
